WHITE WINES, Viognier
Viognier was a rare type of grape brought to Condrieu, on the northern Rhône, over 2,000 years ago by the Greeks or Romans. It was only planted in California a mere 20 years ago. It is now predominantly found in the Rhône valley and California. Viognier is extremely difficult to grow and therefore is only used by few vineyards. Viognier is becoming a favored white wine, as its depth of character and complexity is greater than the current white favorite, Chardonnay. Viognier is noted for spice, floral, citrus, apricot, apple and peach flavors. It typically produces medium bodied wines with relatively high acids and fruit.

WHITE WINES, Sake
Sake is, at its simplest, a concoction of rice, water, and mold. Because of this, the type of rice used, the purity of the water, and other basic quality standards make a huge difference in the type of sake created. The rice is often polished down, removing the surface imperfections. This polishing also removes fatty acids - some companies claim the more fatty acids removed, the less of a hangover the drinker gets.

WHITE WINES, Sauvignon Blanc
Sauvignon Blanc has been used for centuries in France, and came to California in 1878. In the US it is sometimes called "Fumé Blanc", a name first coined by Robert Mondavi to play up its smoky flavors. The sales of the wine under this new name now exceed sales under the original name. New Zealand is now known as one of the top producers of sauvignon Blanc.
Sauvignon Blanc has pronounced flavors of a herbal variety, with grassy and apple flavors, plus olive and a soft, smoky flavor. They can be anything from sweet to dry, but are typically very light. Sauvignon Blancs tend to be crisp and acidic, helping the wine cut through heavy food flavors. It pairs well with seafood and chicken. It will stand up to thick sauces and stews. And is great cocktail wine.

WHITE WINES, Picpoul
Piquepoul or Picpoul is a variety of wine grape grown primarily in the Rhone Valley and Languedoc regions of France. It exists both in dark-skinned (Piquepoul noir) and light-skinned (Piquepoul blanc) versions, as well as a very little grown Piquepoul gris. Piquepoul blanc is the most common of the Piquepouls, with 1,000 hectares (2,500 acres) cultivated in France in 2000, and an increasing trend.
Picpoul de Pinet is a designation or cru which may be used within the Languedoc appellation for white wines made exclusively from Piquepoul blanc in the communes Pinet, Mèze, Florenzac, Castelnau-de-Guers, Montagnac and Pomérols.
The wines are green-gold in colour, full-bodied, and show lemon flavours. Modernization of the winemaking has led to increased interest in these wine.

Valvin Muscat is a hybrid grape variety for use in white wine production. It was developed by grape breeder Bruce Reisch at the Cornell University New York State Agricultural Experiment Station and released on July 7, 2006. Valvin muscat is the result of a cross between Muscat Ottonel (vitis vinifera) and hybrid Muscat du Moulin (Couderc 299-35). It has distinct muscat grape characteristics. RED WINES, French Bordeaux
The region of Bordeaux, France is the largest region of quality wine growing in the world. Bordeaux is made up of five main districts - Medoc, St. Emilion, Pomerol, Graves, and Sauternes. While Medoc and the entire region are best known for their reds ("Clarets"), white wines also have their place. Graves creates dry whites, and Sauternes is known for its sweet whites.
When people just say "Bordeaux wine", they typically mean the classic red blend. The red Bordeaux are created with Cabernet Sauvignon, often blended with Cabernet Franc and Merlot. The color tends to be a garnet/ruby shade. The flavor is typically intense varying between powerful to light and racy, with blackberry, black currant, oak derived vanilla, and other notes.

RED WINES, French Burgundy
Burgundy is known as Bourgogne in France, and has a long history in winemaking. Each sub-region of Burgundy is so different from each other that it is hard to address the region as a whole, and to make any sweeping generalities. The flinty, classic Chablis flavor is made solely with Chardonnay grapes, while the freshness of Beaujolais Nouveau comes from the fruity Gamay. From the Cote D’Or (golden slope) comes the worlds most famous and expensive Pinot Noirs and Chardonnays.

RED WINES, Italian Tuscany
Chianti comes from the Chianti region of Tuscany, Italy. Only wines from this region can properly be called Chianti, although some other areas are using the name on their labels. Chianti was first identified as a wine in the 13th century. Its primary red grapes are Sangiovese and Canaiolo.

RED WINES, Italian Umbria
Sagrantino is grape varietal that grows only around the hilltop town of Montefalco. In fact, it is grown nowhere else in the world (although lately there have been some experiments with it in Tuscany). Its origins are mysterious. Whether the grape is indigenous to the area or not is up for debate. Some theorize that it was brought to Umbria by the Greeks, while others say it was brought by the Franciscan (French) friars. Another theory has St. Francis of Assisi bringing it from the Middle East to be used as a sacramental wine. Among the wine cognoscenti though, it is now Umbrian at its soul.

Super Tuscans
The term "Super Tuscan" describes any Tuscan red wine that does not adhere to traditional blending laws for the region. For example, Chianti Classico wines are made from a blend of grapes with Sangiovese as the dominant varietal in the blend. Super Tuscans often use other grapes, especially Cabernet Sauvignon, making them ineligible for DOC(G) classification under the traditional rules.
In the 1970s Piero Antinori, whose family had been making wine for more than 600 years, decided to make a richer wine by eliminating the white grapes from the Chianti blend, and instead adding Bordeaux varietals (namely, Cabernet Sauvignon and Merlot). He was inspired by a little-known (at the time) Cabernet Sauvignon made by relatives called Sassicaia, which openly flouted the rules set down for traditional wines in Tuscany. The result was the first Super Tuscan, which he named Tignanello, after the vineyard where the grapes were grown. Other winemakers started experimenting with Super Tuscan blends of their own shortly thereafter.
Because these wines did not conform to strict DOC(G) classifications, they were initially labeled as vino da tavola, meaning "table wine," a term ordinarily reserved for lower quality wines. The creation of the Indicazione Geografica Tipica IGT a category (technically indicating a level of quality between vino da tavola and DOCG) helped bring Super Tuscans "back into the fold" from a regulatory standpoint.

The juice is macerated with the skins for approximately 12 days. Daily manual punch-downs ensure greater concentration of flavor and tannins. The wine is aged in Allier, Vosges, Nevers and American oak barriques for 12 months, and refined in bottle for six months.

Nowadays, there are 3,000 acres of Nebbiolo producers in the towns of Barolo, Castiglione Falletto, Cherasco, Diano d'Alba, Grinzane Cavour, La Morra, Monforte d'Alba, Novello, Roddi, and Serralunga d'Alba.

Amarone della Valpolicella, or Amarone for short, is created in the Venetian region of Italy. Originally there was only one legal region, or DOC, for the Valpolicella name. These wines are made with the Corvina Veronese, Rondinella and Molinara grapes. Two sub-groups emerged, though - recioto, which is a sweet dessert wine, and Amarone, which is a dry red wine with great body.
Both recioto and Amarone are made with grapes that have been dried on racks, bringing out their flavors. In 1991 these two were granted their own DOCs. The land area encompassed by these three DOCs is the same, but the types of wine are quite different.

Tempranillo is a variety of black grape widely grown to make full-bodied red wines in its native Spain. It is the main grape used in Rioja, and is often referred to as Spain's "noble grape". Its name is the diminutive of the Spanish temprano, a reference to the fact that it ripens several weeks earlier than most Spanish red grapes.
Tempranillo wines can be consumed young, but the most expensive ones are aged for several years in oak barrels. The wines are ruby red in color, with aromas and flavors of berries, plum, tobacco, vanilla, leather and herb.

Cabernet Sauvignon is the name of both the grape and the wine it produces. Cabernet is known as one of the world's finest red wines, with its depth of complexity and richness of flavour. Other names for this grape and wine are Petit Cabernet, Petit Vidure and Vidure, and in Italy, Uva Francese.
Cabernet is grown all over the world - South America; Australia; Lebanon; Long Island, NY; Northern California; and of course France. The grape is very durable and adapts to various climates well. The two areas of Bordeaux, France that use this grape - Médoc and Graves - have only grown it since the 18th century.

RED WINES, Malbec
Malbec is a red grape that is popular in Argentina and Chile. While it was once grown in Bordeaux, it use has declined in recent times. This black grape creates a rustic, mid-bodied wine, but is most often used in blending with other wines. In Argentina it is almost the most-planted red grape, and is the third most planted in Chile.
Malbec goes well with pizza, pasta, roast and grilled meats such as chicken, beef or turkey. Malbec can be aged for up to 5 years typically

RED WINES, Cabernet Franc
Cabernet Franc is one of the major varieties of red wine grape in Bordeaux. It is mostly grown for blending with Cabernet Sauvignon and Merlot in the Bordeaux style, but is also vinified alone, particularly in Chinon in the Loire.
Cabernet Franc is lighter than Cabernet Sauvignon (of which it is a parent), contributing finesse and a peppery perfume to blends with more robust grapes. Depending on growing region and the style of wine, additional aromas can include tobacco, raspberry, and cassis, sometimes even violets.

Merlot is the name of a red grape which traces its ancestry to the biturica variety. This was brought to France in the first century. The "Merlot" grape was not named as a distinct variety until the 1800s. It is known as a Noble Bordeaux varietal.
Not quite as harsh as other reds, merlot has less tannin than a Cabernet and can therefore be drunk earlier. It is mellow but still complex, a bit chewy. Merlot is known for the flavors of plums, black cherry, violets, and orange. It is a perfect match for beef and other medium-heavy dishes. Try some with a rich, red pasta dish, or even a heavy chicken dish. Merlot is also an excellent compliment to chocolate.

RED WINES, Pinot Noir
It was only recently, in the early 1990s, that Pinot Noir began to be grown in quantity in California, Oregon, Australia and New Zealand. Pinot Noir grows best in cool climates. It is known as an extremely difficult grape to grow and to make into wine.
A Pinot Noir's color can be any of a range of colors - from cherry red to purple-red and even brown as the wine ages. Typical flavors include earth, leather, vanilla (from the oak), and jam ... the fruity flavors of the jam often taste like raspberry, strawberry, and plum.
Pinot is the great alternative red because it is both light in body and full flavored. Pinot Noir can go well with almost anything, salmon, pasta, beef & game. While some pinot noirs are meant to be drunk immediately, a fine Pinot Noir can easily age for 10 years or more.

RED WINES, Shiraz/Syrah
Shiraz and Syrah are both names for the same red wine grape. This grape is most definitely NOT the same as Petit Sirah, a different red wine grape grown mostly in California.
The Shiraz / Syrah grape is called Syrah in the US, France and many countries. In Australia it is called Shiraz, where it is considered the finest red wine grown there. Shiraz is certainly the most widely planted red grape in Australia. Now that Shiraz has become well known and popular, some wineries in the US who are making an "Australian style wine" with this grape are calling their wines Shiraz as well.
Shiraz goes very well with beef and other hearty foods. It also goes well with Indian, Mexican, and other spicy foods.

RED WINES, Zinfandel
Red Zinfandel is an "American Classic" wine. It was even originally thought to be made of native Californian grapes. Research has now shown that the zinfandel grape originated in Italy, but this wine is now primarily grown in California. Zinfandel grows its best in cool, coastal locations.
The color of a zinfandel wine is deep red, bordering on black. Zinfandel is a spicy, peppery wine, with a hint of fruity flavor - berries or dark cherries are often the taste range. Zinfandel goes well with "typical American" food - pizza, burgers, etc. It's hearty enough to match up with thick red sauces.

RED WINES, Petite Sirah
The Petite Sirah grape creates a rich red wine. The Petite Sirah grape is separate from the Sirah / Shiraz grape even though the names are similar. The Petite Sirah grape is descended from the Duriff Rhone grape of France. For most of its history, Petite Sirah was only used to blend into other wines. The grape gained a lot of attention in the 1970s because of the general red wine push, and because of its full, tannic taste.
Petite Sirah is predominantly planted in California, where it does well. Petites are anything but petite - they tend to be big, strong, muscular, and, well, purple.
Typical flavors include plum, raspberry, blackberries, and black pepper. The wine tends to go well with stronger meats - game, beef, lamb, and spicy sauces. Petite Sirah can be drunk fresh from the bottle or aged for a more mellow flavor - its high tannin content makes long aging worthwhile.

RED WINES, Carmenere
The Carménère grape is a wine grape variety originally planted in the Médoc region of Bordeaux, France, where it was used to produce deep red wines and occasionally used for blending purposes in the same manner as Petit Verdot.
Carménère wine has a deep red color and aromas found in red fruits, spices and berries. The tannins are gentler and softer than hose in Cabernet Sauvignon and it is a medium body wine.

SCOTCH WHISKEY
Independent Merchant Bottlings
Before the present-day revival in popularity of single malt Scotch whiskies, a number of the 100 or so malt whisky distilleries did not bother to bottle their own product. Almost all of their production would be sold to blenders, directly or through brokers. The one exception to this rule was the relative handful of casks from each season_s production that would be sold to independent retail merchants or bottlers who would mature the whisky on their own, then at an age of their own choosing, bottle and sell them to the public. This commercial tradition was more prevalent before the rise of supermarket and discount liquor chains, but a handful of independent bottlers remain in Scotland. The best known of these are Cadenhead, Gordon & McPhail, and The Malt Whiskey Society. These merchant bottlings can offer interesting variations on official distillery bottlings.

BOURBON
Bourbon Whisky must contain a minimum of 51% corn, be produced in the United States, be distilled at less than 80% ABV (160 proof) and be aged for a minimum of two years in new charred barrels, although in practice virtually all straight whiskies are aged at least four years. Any Bourbon, or any other domestic or imported whiskey, for that matter, that has been aged less than four years must contain an age statement on the label. Small Batch Bourbons are bourbons that bottled from a small group of specially selected barrels that are blended together. It should be noted though that each distiller has their own interpretation of what constitutes a "small batch." Single Barrel Bourbon is Bourbon from one specifically chosen cask.
The Taste: Flavor descriptors such as toffee, pralines, vanilla, and dried fruit to describe the initial rush of flavors in a good, well-aged Bourbon. The charred oak barrels give Bourbon a distinctive spicy oak firmness that is unique to American whiskeys.

American RYE WHISKY
Rye Whisky must contain a minimum of 51% rye grain, be distilled at less than 80% ABV (160 proof) and be aged for a minimum of two years in new charred barrels. A small amount of straight Rye whiskey is bottled and marketed, but most of the industry production is blended into other whiskies to give them additional character and structure. Canadians frequently refer to their whisky as "Rye," though it is in fact made primarily from corn or wheat.
The Taste: While the best Bourbon is known for a creamy, caramel-like palate, the best Rye whiskey makes its presence known with a spicy, grainy, hard-edged firmness that is distinctive and unique. Usually very dry, with notes of walnut, toasted grain, and black pepper, straight rye has a bold assertive character that has earned it a small but dedicated following among discerning whiskey fans.
Hudson Manhattan Rye 12
American Whisky
Blended American Whiskey is required to contain at least 20% straight whiskey; with the balance being unaged neutral spirit or, in a few cases, high-proof light whiskey. It has a general whiskey flavor profile (most closely resembling Bourbon), but lacks any defining taste characteristic.

Canadian Whisky
Canadian whiskies, as with their American cousins, originated on the farm. These early whiskies were made primarily from rye. In time most Canadian distillers turned to corn, wheat, and other grains, but Canadians continue to refer to their whisky as "Rye" even though the mash bill for most Canadian Whisky is now predominantly a mix of corn, wheat, and barley, with only a modest perportion of rye for flavor, which results in a lighter-bodied spirit.

RUM
Rum, and its fraternal twin, cane spirit, are made by distilling fermented sugar and water. This sugar comes from the sugar cane and is fermented from cane juice, concentrated cane juice, or molasses. Molasses is the sweet, sticky residue that remains after sugar cane juice is boiled and the crystallized sugar is extracted.
Most Rum is made from molasses. Molasses is over 50% sugar, but it also contains significant amounts of minerals and other trace elements, which can contribute to the final flavor. Rums made from cane juice, primarily on Haiti and Martinique, have a naturally smooth palate.
Classifications of Rum
White Rums are generally light-bodied (although there are a few heavy-bodied White Rums in the French islands). They are usually clear and have a very subtle flavor profile. If they are aged in oak casks to create a smooth palate they are then usually filtered to remove any color. White Rums are primarily used as mixers and blend particularly well with fruit flavors.
Golden Rums, also known as Amber Rums, are generally medium-bodied. Most have spent several years aging in oak casks, which give them smooth, mellow palates.
Dark Rums are traditionally full-bodied, rich, caramel-dominated Rums. The best are produced mostly from pot stills and frequently aged in oak casks for extended periods. The richest of these Rums are consumed straight up.
Spiced Rums can be white, golden, or dark Rums. They are infused with spices or fruit flavors. Rum punches (such as planter_s punch) are blends of Rum and fruit juices that are very popular in the Caribbean.

Guyana is justly famous for its rich, heavy Demerara Rums, named for a local river, which are produced from both pot and column stills. Demerara Rums can be aged for extended periods (25-year-old varieties are on the market) and are frequently used for blending with lighter Rums from other regions.

Cognac named after the town of Cognac in France, is the most famous variety of brandy, produced in the wine-growing region surrounding the town from which it takes its name, in the French Departements of Charente and Charente-Maritime.
According to French Law, in order to bear the name, Cognac must meet strict legal requirements, ensuring that the 300-year old production process remains unchanged. It must be made from at least 90% Ugni Blanc, Folle Blanche or Colombard grapes, although of these, Ugni Blanc, known locally as Saint-Emilion, is the variety most used today by some way. It must be distilled twice in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais.

Germain-Robin, based in Ukiah, California, is one of the highest rated alembic brandy makers in the world. The distillery was founded in 1982 by Ansley J. Coale, a local rancher, and Hubert Germain-Robin, a native of Cognac, France. Coale, a former Princeton professor of ancient history, had bought 2,000 acres (809 ha) of farmland outside of Ukiah, named Eagle Ridge Ranch, in 1973. By chance, one day in 1981 he picked up Germain-Robin, who was hitchhiking throughout California in search of a location to make brandy. Germain-Robin came from a family that had been making cognac under the name Jules Robin & Company, but had recently sold the business to Martell, prompting Germain-Robin to leave. Ronald Reagan was an aficionado of Germain-Robin brandies and reserved a number of barrels for the White House, which he served as a matter of national pride to visiting dignitaries such as Michael Gorbachev and François Mitterrand

ARMAGNAC
Armagnac is a distinctive kind of brandy or eau de vie produced in the Armagnac region in Gascony, southwest France. It is distilled from wine usually made from a blend of grapes including Ugni Blanc, Colombard, and Baco 22A, using column stills rather than the pot stills used in the production of Cognac. The resulting spirit is then aged in oak barrels before release. Production is overseen by INAO and the Bureau National Interprofessionel de l'Armagnac
Armagnac was one of the first areas in France to begin distilling spirits, but the brandies produced have a lower profile than those from Cognac and the overall volume of production is far smaller. In addition they are for the most part made and sold by small producers, whereas in Cognac production is dominated by big-name brands

ABSINTHE
Absinthe is a distilled, highly alcoholic (45%-90% ABV), anise-flavored spirit derived from herbs, including the flowers and leaves of the herb Artemisia absinthium, also called "wormwood." Absinthe is typically of a natural green color but is also produced in both clear and artificially colored styles. It is often called "the Green Fairy."
Although it is sometimes mistakenly called a liqueur, absinthe is not bottled with added sugar and is therefore classified as a liquor. Absinthe is unusual among spirits in that it is bottled at a high proof but is normally diluted with water when it is drunk.
Absinthe originated in Switzerland. However, it is better known for its popularity as an alcoholic drink in late 19th- and early 20th-century France, particularly among Parisian artists and writers. Due in part to its association with bohemian culture, absinthe was opposed by social conservatives and prohibitionists. Charles Baudelaire, Paul Verlaine, Arthur Rimbaud, Vincent van Gogh, Oscar Wilde, and Aleister Crowley were all notorious "bad men" of that day who were (or were thought to be) devotees of the Green Fairy.
Absinthe was portrayed as a dangerously addictive, psychoactive drug. The chemical thujone, present in small quantities, was blamed for its alleged harmful effects. By 1915 absinthe had been banned in the United States and in most European countries except the United Kingdom, Spain, Portugal, and the Austro-Hungarian Empire. Although absinthe was vilified, no evidence has shown it to be any more dangerous than ordinary liquor. Its psychoactive properties, apart from those of ethanol, have been much exaggerated.
A revival of absinthe began in the 1990s, when countries in the European Union began to reauthorize its manufacture and sale. As of February 2008, nearly 200 brands of absinthe were being produced in a dozen countries, most notably France, Switzerland, Spain, and the Czech Republic.

Gin
Gin and its Lowlands cousin Genever (Jenever in Belgium) are white spirits that are flavored with juniper berries and so-called botanicals (a varied assortment of herbs and spices). The spirit base of Gin is primarily grain (usually wheat or rye), which results in a light-bodied spirit.
London Dry Gin is the dominant English style of Gin. As a style it lends itself particularly well to mixing. London Dry Gin is the dominant Gin style in the United Kingdom, former British colonies, the United States, and Spain.
Plymouth Gin is relatively full-bodied (when compared to London Dry Gin). It is clear, slightly fruity, and very aromatic. Originally the local Gin style of the English Channel port of Plymouth, modern Plymouth Gin is nowadays made only by one distillery in Plymouth, Coates & Co., which also controls the right to the term Plymouth Gin.
Genever is made primarily from "malt wine" (a mixture of malted barley, wheat, corn, and rye), which produces a fuller-bodied spirit similar to raw malt whisky. A small number of genevers in Holland and Belgium are distilled directly from fermented juniper berries, producing a particularly intensely flavored spirit.

Hendrick’s
Located in Milton, Delaware, the Dogfish Head Brewery was founded in 1995 by Sam Calagione. The brewery’s “extreme” beers have quickly become a favorite of Aroma Thyme Bistro’s owner/chef Marcus Guiliano.
Dogfish Head's signature product is its line of India Pale Ales (IPAs), which are offered in three varieties: 60 Minute, 90 Minute, and 120 Minute IPA. Their names refer to the length of the boil time of the wort in which the hops are continuously added. The longer hops are boiled, the more bitterness is imparted to the beer.
(6) Dogfish Head Raison D’Etre 12 oz. 8 8 ABV
A deep, mahogany ale brewed with beet sugar, green raisins, and Belgian-style yeast. As complex as a fine, red wine.
(1100) Dogfish Head Raison D’Extre 12 oz. 18 18 ABV
A bigger, bolder version of our Raison D'Etre.
This is a bulbous, brown ale brewed with a bunch of malt, brown sugar and raisins.
(6) Dogfish Head 60 Minute 12 oz. 5 6 ABV
60 Minute IPA is continuously hopped - more than 60 hop additions over a 60 minute boil (getting a vibe yet of where the name came from?). 60 Minute is a session India Pale Ale brewed with a slew of great NorthWest hops. A powerful, but balanced East Coast I.P.A. with a lot of citrusy hop character.
(6) Dogfish Head 90 Minute 12 oz. 7 9 ABV
Esquire Magazine calls our 90 Minute IPA., "perhaps the best I.P.A. in America." An Imperial I.P.A. brewed to be savored from a snifter. A big beer with a great malt backbone that stands up to the extreme hopping rate.
(5) Dogfish Head 120 Minute 12 oz. 18 18 ABV
Too extreme to be called beer? Brewed to a colossal 45-degree plato, boiled for a full 2 hours while being continuously hopped with high-alpha American hops, then dry-hopped daily in the fermenter for a month & aged for another month on whole-leaf hops!!
(1100) Dogfish Head Olde School Barley Wine 12 oz. 9 15 ABV
Bold, yet smooth! Fermented with dates and figs, this bone-crusher has a completely unique flavor.
(1100) Dogfish Head Immort Ale 12 oz. 7 11 ABV
Vast in character, luscious & complex. Brewed with peat-smoked barley, Immort is brewed with organic juniper berries, vanilla & maple syrup. It's aged on oak and fermented with a blend of English & Belgian yeasts.
(1100) Dogfish Head Burton Baton Ale 12 oz. 7 10 ABV
A blend of oak-aged English strong ale and our 90 Minute I.P.A.. Citrus notes from Northwestern hops meld with vanilla notes from the oak.
(5) Dogfish Head Indian Brown Ale 12 oz. 6 7.2 ABV
Indian Brown Ale is well-hopped and malty at the same time.
(1100) Dogfish Head Red and White 25.4 oz. 25 10 ABV
A big, belgian-style Wit brewed with coriander and orange peel and fermented with Pinot Noir juice. After fermentation a fraction of the batch is aged in Oregon Pinot Noir barrels, and another fraction is aged on oak staves. The beer is blended together before packaging.
(1100) Dogfish Head Pangea 25.4 oz. 25 7 ABV
Brewed with ingredients from every continent (crystallized ginger from Australia, water from Antarctica, basmati rice from Asia, etc...), this is slightly spicy ale, with a mouthful of rich flavors
(5) Dogfish Head World Wide Stout 12 oz. 18 18 ABV
This is the beer you've heard so much about. Dark, rich, roasty and complex, World Wide Stout has more in common with a fine port than a can of cheap, mass-marketed beer. Brewed with a ridiculous amount of barley. Have one with (or as!) dessert tonight!
(5) Dogfish Head Palo Santo Marron 12 oz. 8 12 ABV
An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted.
(5) Dogfish Head Chateau Jiahu 25.4 oz. 25 8 ABV
Preserved pottery jars found in the Neolithic villiage of Jiahu, in Henan province,Northern China, has revealed that a mixed fermented beverage of rice, honey and fruit was being produced that long ago - right around the same time that barley beer and grape wine were beinginning tobe made in the Middle East!
(1100) Dogfish Head Theobrama 25.4 oz. 25 9 ABV
This beer is based on chemical analysis of pottery fragments found in Honduras which revealed the earliest known alcoholic chocolate drink used by early civilizations to toast special occasions. The discovery of this beverage pushed back the earliest use of cocoa for human consumption more than 500 years to 1200 BC. As per the analysis, Dogfish Head’s Theobroma (translated into 'food of the gods') is brewed with Aztec cocoa powder and cocoa nibs, honey, chilies, and annatto (fragrant tree seeds). It's light in color - not what you expect with your typical chocolate beer. Not that you'd be surpised that we'd do something unexpected with this beer!
The Ales of Brewery Ommegang, Cooperstown New York.
Welcome to the Ales of Brewery Ommegang, where the beer isn't overhopped or overhyped. These Belgian-style ales are functional art, crafted to make your dining and drinking experience something to behold.

Bright and lively in your mouth with a warming mix of spicy gingersnap and citrusy hops.
(700) Ommegang Belgium Style Pale 25.4 oz. 17

(WC) Ommegang Abbey Ale 3 liters 65
Honey, toffee, chocolate and dark dried fruit delight your senses
(1) Ommegang Rare Vos 12 oz. 6

(1) Ommegang Three Philosophers 2008 12 oz. 6
(900) Ommegang Three Philosophers 2005 25.4 oz. 32
(900) Ommegang Three Philosophers 2007 25.4 oz. 27
Luscious blend of rich malty ale and cherry lambic so delightful. It might be the flavor of dark chocolate and cherry cordials; it could be the way it acquires wisdom and grace in the cellar.
(700) Ommegang Biere De Mars (out of stock) 25.4 oz. 24
Ommegang Bière de Mars is a Belgian-style amber ale with a bit of magical space dust woven in - Brettanomyces bruxellensis, a wild-yeast used in the secondary fermentation. The Brett imparts added tartness, a bit of zing and some farmhouse funkiness. Also dry-hopped, this new ale continues our exploration of using Brett for secondary fermentation in limited-release beers.
(700) Ommegang Ommegeddon 25.4 oz. 24
Strong blonde ale with a sharp citrus flavor that, like the other Ommegang ales, has a dry finish.
(700) Ommegang Chocolate Indulgence 25.4 oz. 20
Belgian dark chocolate gliding across the tongue; starting sweet up front but giving way to rich cocoa flavors at the back. Through it all, a subtle fruitiness from our special Belgian yeast gives the beer brightness
CAVE AGED Ommegang Abbey Ale 25.4 oz. 39
CAVE AGED Ommegang Hennepin Saison 25.4 oz. 39
On a freezing day each mid-winter, 280 cases of Ommegang ale are transported forty five minutes east of Cooperstown to the heart of "cave country." The beer is lowered 156 feet into the celebrated Howe Caverns. This is the only cave-aging of beer on American soil in recent memory. Forty meters below ground, at a constant temperature of 52 degrees F.
Cave-aging (and cellar-aging) were traditional aging methods before modern refrigeration, and today are still used in the Champagne region of France. Remarkably, similar conditions are at hand in Schoharie County in New York. In the section of the Allegheny Plateau north of Cobleskill, which is capped by early to middle Devonian Helderberg and Onondaga limestones, conditions are ideal for cave formation. The most celebrated of these formations is Howe Caverns.
(1) Stone Ruination 12 oz. 7
So called because of the immediate ruinous effect on your palate. 100+ IBUs. Bracingly bitter. Thick, pungent hop aroma. We would say that no hops were injured in the brewing of this beer, but that would be a massive lie. In fact, the words "Stone Ruination IPA" are what older hop vines use to cause little hop vines to quiver with fright and lose sleep at night . We at Stone honor the brutal massacre of countless hops with this "Liquid poem to the glory of the hop!" Paganism at its best!
(1100) Stone Smoked Porter 22 oz. 14
A rich, dark and delicious porter with chocolate and coffee overtones accented by a subtle smokiness from just the right amount of peat smoked malt. Unlike a rauchbier, the "smoke" in Stone Smoked Porter is an ELEMENT of the character rather than being THE character. -- Greg Koch, Stone Brewing Co.
(1100) Stone Arrogant Bastard 22 oz. 18
This is an aggressive beer. You probably won’t like it. It is quite doubtful that you have the taste or sophistication to appreciate an ale of this quality and depth.
(1100) Stone Old Guardian 22 oz. 15
A beautiful bold barley wine. Massive malt and hop notes. Silver Medal winner at the 2000 Great American Beer Festival in the Barley Wine category. Gold Medal winner at the 2002 World Beer Championships in the Barley Wine Category. Look for it in the first quarter of each new year. Can be cellared or enjoyed upon its release.
(1100) Stone Imperial Russian Stout 22 oz. 15
"There's no question that Stone Imperial Stout is revered among enthusiasts," states Stone CEO Greg Koch. "I know, because I'm one of 'em and I can hardly wait for it to come out each year!" Some may think that a late Spring release for a special brew of this sort is an odd time for it to come out onto the market. Koch justifies this with the rationalization "What better than a warm time of year to come out with a brew that tastes great as it warms up!" That's because "ice cold" is certainly not the appropriate way to serve the beer. Nearly without exception, the darker, richer and more alcoholic a brew is, the warmer the serving temperature should be. The Stone Imperial Stout label describes the brew as being "intensely aromatic (notes of anise, black currants, coffee, roastiness and alcohol) and heavy on the palate...expect this mysterious brew to pour like used motor oil and taste even heavier! Serve at 55 degrees."
(1100) Stone Cali-Belgique 22 oz. 18
When reading the name “Stone Cali-Belgique IPA”, “Cali” hints that it is a California style IPA, and this brew has an undeniable Belgian influence, indicated by the word “Belgique” (which is how Belgium’s French-speaking population says the word “Belgian”; the Dutch speaking Belgians say “Belgie”). We carefully selected a Belgian yeast strain that illuminates a fascinating new aspect of the beer that is otherwise quite simply Stone IPA.
(1100) Stone Vertical Epic 2007 22 oz. 15
In this year's edition we took our inspiration from two Belgian styles: Saisons and Golden Triples. As such, the Stone 07.07.07 Vertical Epic has a deep, deep golden hue and the flavor is spicy, fruity, complex and refreshing. We used four different malts, and a subtle, yet distinct, blend of Glacier and Crystal hops to get just the right balance. Then, for the complexity, we added in some exotic spices --- including ginger, cardamom, grapefruit peel, lemon peel and orange peel (the latter three acknowledging our Southern California home) --- and a special Belgian yeast strain. All in all this is yet another case of us drawing from classic Belgian influences and cavalierly making it our own...San Diego style!
(1100) Stone Vertical Epic 2009 22 oz. 15
This is quite a complex and layered beer. Bold and smooth chocolate malt flavors combine with a Belgian yeast lending tropical fruit/banana flavors and hints of spiciness, all complemented by citrus notes from an addition of tangerine peel. Rich vanilla beans add a nice counter to the chocolate malt - actually enhancing the chocolatiness. The finish is smooth, with additional traces of vanilla and toasted characters from French Oak. The goal for this edition of the Stone Vertical Epic Ale series is to be reminiscent of artisanal chocolates accentuated with orange.
The brewing methods used by Unibroue, Canada, have been inspired by the great European brewing traditions and, in this respect, are one of a kind in North America. The methods used stand out, in particular, from the brewing methods of the mass-producing breweries and even from the other North American craft brewers because the beer is refermented in bottles and partly-clarified only. Through these methods, specialty beers with an evolutive taste and a long shelf life are produced. The manufacturing of the beer at Unibroue is done in five phases: brewing, fermentation, clarification, bottling and kegging and, finally, refermentation in bottles in the holding room.

(dohn-deh-dyeuh) Triple wheat ale 9% ABV
Don de Dieu displays an appealing orange-golden hue with a stable, creamy head of foam. Its fruity, malty and yeasty flavor is quickly succeeded by a palate-warming finish of roasted nuts and spices.

Sour ALEs
Sour Ales have a strong fruit flavor similar to the aroma, but more intense. Plum, prune, raisin and black cherry are the most common flavors, followed by orange and some spiciness. Sour Ales have an obvious sour or acidic taste, but this characteristic can range from moderate to strong. There is no hop bitterness, but tannins are common. Subsequently, Sour Ales are often described as the most "wine-like" of all beers. Sours are an acquired taste.
