WHITE WINES, Sauvignon Blanc
Sauvignon Blanc has been used for centuries in France, and came to California in 1878. In the US it is sometimes called "Fumé Blanc", a name first coined by Robert Mondavi to play up its smoky flavors. The sales of the wine under this new name now exceed sales under the original name. New Zealand is now known as one of the top producers of sauvignon Blanc.
Sauvignon Blanc has pronounced flavors of a herbal variety, with grassy and apple flavors, plus olive and a soft, smoky flavor. They can be anything from sweet to dry, but are typically very light. Sauvignon Blancs tend to be crisp and acidic, helping the wine cut through heavy food flavors. It pairs well with seafood and chicken. It will stand up to thick sauces and stews. And is great cocktail wine.

Viognier was a rare type of grape brought to Condrieu, on the northern Rhône, over 2,000 years ago by the Greeks or Romans. It was only planted in California a mere 20 years ago. It is now predominantly found in the Rhône valley and California. Viognier is extremely difficult to grow and therefore is only used by few vineyards. Viognier is becoming a favored white wine, as its depth of character and complexity is greater than the current white favorite, Chardonnay. Viognier is noted for spice, floral, citrus, apricot, apple and peach flavors. It typically produces medium bodied wines with relatively high acids and fruit.

Valvin Muscat is a hybrid grape variety for use in white wine production. It was developed by grape breeder Bruce Reisch at the Cornell University New York State Agricultural Experiment Station and released on July 7, 2006. Valvin muscat is the result of a cross between Muscat Ottonel (vitis vinifera) and hybrid Muscat du Moulin (Couderc 299-35). It has distinct muscat grape characteristics. Because of this, the type of rice used, the purity of the water, and other basic quality standards make a huge difference in the type of sake created. The rice is often polished down, removing the surface imperfections. The region of Bordeaux, France is the largest region of quality wine growing in the world. Bordeaux is made up of five main districts - Medoc, St. Emilion, Pomerol, Graves, and Sauternes. While Medoc and the entire region are best known for their reds ("Clarets"), white wines also have their place. Graves creates dry whites, and Sauternes is known for its sweet whites.
When people just say "Bordeaux wine", they typically mean the classic red blend. The red Bordeaux are created with Cabernet Sauvignon often blended with Cabernet Franc and Merlot. The color tends to be a garnet/ruby shade. The flavor is typically intense varying between powerful to light and racy, with blackberry, black currant, oak derived vanilla, and other notes.

Super Tuscans
The term "Super Tuscan" describes any Tuscan red wine that does not adhere to traditional blending laws for the region. For example, Chianti Classico wines are made from a blend of grapes with Sangiovese as the dominant varietal in the blend. Super Tuscans often use other grapes, especially Cabernet Sauvignon, making them ineligible for DOC(G) classification under the traditional rules.
In the 1970s Piero Antinori, whose family had been making wine for more than 600 years, decided to make a richer wine by eliminating the white grapes from the Chianti blend, and instead adding Bordeaux varietals (namely, Cabernet Sauvignon and Merlot). He was inspired by a little-known (at the time) Cabernet Sauvignon made by relatives called Sassicaia, which openly flouted the rules set down for traditional wines in Tuscany. The result was the first Super Tuscan, which he named Tignanello, after the vineyard where the grapes were grown. Other winemakers started experimenting with Super Tuscan blends of their own shortly thereafter.
Because these wines did not conform to strict DOC(G) classifications, they were initially labeled as vino da tavola, meaning "table wine," a term ordinarily reserved for lower quality wines. The creation of the Indicazione Geografica Tipica IGT a category (technically indicating a level of quality between vino da tavola and DOC(G) helped bring Super Tuscans "back into the fold" from a regulatory standpoint.

100% Sangiovese di Lamole (a naturally low yielding clone of Sangiovese) from 70 year-old vines grown at 1,350 feet above sea level with west-southwest exposure. The juice is macerated with the skins for approximately 12 days. Daily manual punch-downs ensure greater concentration of flavor and tannins. The wine is aged in Allier, Vosges, Nevers and American oak barriques for 12 months, and refined in bottle for six months.

These wines are made with the Corvina Veronese, Rondinella and Molinara grapes. Two sub-groups emerged, though - recioto, which is a sweet dessert wine, and Amarone, which is a dry red wine with great body.
Both recioto and Amarone are made with grapes that have been dried on racks, bringing out their flavors. In 1991 these two were granted their own DOCs. The land area encompassed by these three DOCs is the same, but the types of wine are quite different.

Tempranillo is a variety of black grape widely grown to make full-bodied red wines in its native Spain. It is the main grape used in Rioja, and is often referred to as Spain's "noble grape". Its name is the diminutive of the Spanish temprano, a reference to the fact that it ripens several weeks earlier than most Spanish red grapes.
Tempranillo wines can be consumed young, but the most expensive ones are aged for several years in oak barrels. The wines are ruby red in color, with aromas and flavors of berries, plum, tobacco, vanilla, leather and herb.

It was only recently, in the early 1990s, that Pinot Noir began to be grown in quantity in California, Oregon, Australia and New Zealand. Pinot Noir grows best in cool climates. It is known as an extremely difficult grape to grow and to make into wine.
A Pinot Noir's color can be any of a range of colors - from cherry red to purple-red and even brown as the wine ages. Typical flavors include earth, leather, vanilla (from the oak), and jam ... the fruity flavors of the jam often taste like raspberry, strawberry, and plum.
Pinot is the great alternative red because it is both light in body and full flavored. Pinot Noir can go well with almost anything, salmon, pasta, beef & game. While some pinot noirs are meant to be drunk immediately, a fine Pinot Noir can easily age for 10 years or more.

Malbec is a red grape that is popular in Argentina and Chile. While it was once grown in Bordeaux, it use has declined in recent times. Merlot is the name of a red grape which traces its ancestry to the biturica variety. This was brought to France in the first century. The "Merlot" grape was not named as a distinct variety until the 1800s. It is known as a Noble Bordeaux varietal.
Not quite as harsh as other reds, merlot has less tannin than a Cabernet and can therefore be drunk earlier. It is mellow but still complex, a bit chewy. Merlot is known for the flavors of plums, black cherry, violets, and orange. It is a perfect match for beef and other medium-heavy dishes. Try some with a rich, red pasta dish, or even a heavy chicken dish. Merlot is also an excellent compliment to chocolate.

Shiraz and Syrah are both names for the same red wine grape. This grape is most definitely NOT the same as Petit Sirah, a different red wine grape grown mostly in California.
The Shiraz / Syrah grape is called Syrah in the US, France and many countries. In Australia it is called Shiraz, where it is considered the finest red wine grown there. Shiraz is certainly the most widely planted red grape in Australia. Now that Shiraz has become well known and popular, some wineries in the US who are making an "Australian style wine" with this grape are calling their wines Shiraz as well.
Shiraz goes very well with beef and other hearty foods. It also goes well with Indian, Mexican, and other spicy foods.

The Petite Sirah grape creates a rich red wine. The Petite Sirah grape is separate from the Sirah / Shiraz grape even though the names are similar. The Petite Sirah grape is descended from the Duriff Rhone grape of France. Petite Sirah is predominantly planted in California, where it does well. Petites are anything but petite - they tend to be big, strong, muscular, and, well, purple.
Typical flavors include plum, raspberry, blackberries, and black pepper. The wine tends to go well with stronger meats - game, beef, lamb, and spicy sauces. Petite Sirah can be drunk fresh from the bottle or aged for a more mellow flavor - its high tannin content makes long aging worthwhile.

Independent Merchant Bottlings
Before the present-day revival in popularity of single malt Scotch whiskies, a number of the 100 or so malt whisky distilleries did not bother to bottle their own product. Almost all of their production would be sold to blenders, directly or through brokers. The one exception to this rule was the relative handful of casks from each season_s production that would be sold to independent retail merchants or bottlers who would mature the whisky on their own, then at an age of their own choosing, bottle and sell them to the public. This commercial tradition was more prevalent before the rise of supermarket and discount liquor chains, but a handful of independent bottlers remain in Scotland. The best known of these are Cadenhead, Gordon & McPhail, and The Malt Whiskey Society. These merchant bottlings can offer interesting variations on official distillery bottlings.

BOURBON
Bourbon Whiskey must contain a minimum of 51% corn, be produced in the United States, be distilled at less than 80% ABV (160 proof) and be aged for a minimum of two years in new charred barrels, although in practice virtually all straight whiskies are aged at least four years. Any Bourbon, or any other domestic or imported whiskey, for that matter, that has been aged less than four years must contain an age statement on the label. Small Batch Bourbons are bourbons that bottled from a small group of specially selected barrels that are blended together. It should be noted though that each distiller has their own interpretation of what constitutes a "small batch." Single Barrel Bourbon is Bourbon from one specifically chosen cask.
The Taste: Flavor descriptors such as toffee, pralines, vanilla, and dried fruit to describe the initial rush of flavors in a good, well-aged Bourbon. The charred oak barrels give Bourbon a distinctive spicy oak firmness that is unique to American whiskeys.

Canadian whiskies, as with their American cousins, originated on the farm. These early whiskies were made primarily from rye. In time most Canadian distillers turned to corn, wheat, and other grains, but Canadians continue to refer to their whisky as "Rye" even though the mash bill for most Canadian Whisky is now predominantly a mix of corn, wheat, and barley, with only a modest perportion of rye for flavor, which results in a lighter-bodied spirit.

RUM
Rum, and its fraternal twin, cane spirit, are made by distilling fermented sugar and water. This sugar comes from the sugar cane and is fermented from cane juice, concentrated cane juice, or molasses. Molasses is the sweet, sticky residue that remains after sugar cane juice is boiled and the crystallized sugar is extracted.
Most Rum is made from molasses. Molasses is over 50% sugar, but it also contains significant amounts of minerals and other trace elements, which can contribute to the final flavor. Rums made from cane juice, primarily on Haiti and Martinique, have a naturally smooth palate.
Classifications of Rum
White Rums are generally light-bodied (although there are a few heavy-bodied White Rums in the French islands). They are usually clear and have a very subtle flavor profile. If they are aged in oak casks to create a smooth palate they are then usually filtered to remove any color. White Rums are primarily used as mixers and blend particularly well with fruit flavors.
Golden Rums, also known as Amber Rums, are generally medium-bodied. Most have spent several years aging in oak casks, which give them smooth, mellow palates.
Dark Rums are traditionally full-bodied, rich, caramel-dominated Rums. The best are produced mostly from pot stills and frequently aged in oak casks for extended periods. The richest of these Rums are consumed straight up.
Spiced Rums can be white, golden, or dark Rums. They are infused with spices or fruit flavors. Rum punches (such as planter_s punch) are blends of Rum and fruit juices that are very popular in the Caribbean.

COGNAC
Cognac named after the town of Cognac in France, is the most famous variety of brandy, produced in the wine-growing region surrounding the town from which it takes its name, in the French Departements of Charente and Charente-Maritime.
According to French Law, in order to bear the name, Cognac must meet strict legal requirements, ensuring that the 300-year old production process remains unchanged. It must be made from at least 90% Ugni Blanc, Folle Blanche or Colombard grapes, although of these, Ugni Blanc, known locally as Saint-Emilion, is the variety most used today by some way. It must be distilled twice in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais.

Germain-Robin, based in Ukiah, California, is one of the highest rated alembic brandy makers in the world. The distillery was founded in 1982 by Ansley J. Coale, a local rancher, and Hubert Germain-Robin, a native of Cognac, France. Coale, a former Princeton professor of ancient history, had bought 2,000 acres (809 ha) of farmland outside of Ukiah, named Eagle Ridge Ranch, in 1973. By chance, one day in 1981 he picked up Germain-Robin, who was hitchhiking throughout California in search of a location to make brandy. Germain-Robin came from a family that had been making cognac under the name Jules Robin & Company, but had recently sold the business to Martell, prompting Germain-Robin to leave. Ronald Reagan was an aficionado of Germain-Robin brandies and reserved a number of barrels for the White House, which he served as a matter of national pride to visiting dignitaries such as Michael Gorbachev and François Mitterrand

ARMAGNAC
Armagnac is a distinctive kind of brandy or eau de vie produced in the Armagnac region in Gascony, southwest France. It is distilled from wine usually made from a blend of grapes including Ugni Blanc, Colombard, and Baco 22A, using column stills rather than the pot stills used in the production of Cognac. The resulting spirit is then aged in oak barrels before release. Production is overseen by INAO and the Bureau National Interprofessionel de l'Armagnac
Armagnac was one of the first areas in France to begin distilling spirits, but the brandies produced have a lower profile than those from Cognac and the overall volume of production is far smaller. In addition they are for the most part made and sold by small producers, whereas in Cognac production is dominated by big-name brands

ABSINTHE
Absinthe is a distilled, highly alcoholic (45%-90% ABV), anise-flavored spirit derived from herbs, including the flowers and leaves of the herb Artemisia absinthium, also called "wormwood." Absinthe is typically of a natural green color but is also produced in both clear and artificially colored styles. It is often called "the Green Fairy."
Although it is sometimes mistakenly called a liqueur, absinthe is not bottled with added sugar and is therefore classified as a liquor. Absinthe is unusual among spirits in that it is bottled at a high proof but is normally diluted with water when it is drunk.
Absinthe originated in Switzerland. However, it is better known for its popularity as an alcoholic drink in late 19th- and early 20th-century France, particularly among Parisian artists and writers. Due in part to its association with bohemian culture, absinthe was opposed by social conservatives and prohibitionists. Charles Baudelaire, Paul Verlaine, Arthur Rimbaud, Vincent van Gogh, Oscar Wilde, and Aleister Crowley were all notorious "bad men" of that day who were (or were thought to be) devotees of the Green Fairy.
Absinthe was portrayed as a dangerously addictive, psychoactive drug. The chemical thujone, present in small quantities, was blamed for its alleged harmful effects. By 1915 absinthe had been banned in the United States and in most European countries except the United Kingdom, Spain, Portugal, and the Austro-Hungarian Empire. Although absinthe was vilified, no evidence has shown it to be any more dangerous than ordinary liquor. Its psychoactive properties, apart from those of ethanol, have been much exaggerated.
A revival of absinthe began in the 1990s, when countries in the European Union began to reauthorize its manufacture and sale. As of February 2008, nearly 200 brands of absinthe were being produced in a dozen countries, most notably France, Switzerland, Spain, and the Czech Republic.

Gin
Gin and its Lowlands cousin Genever (Jenever in Belgium) are white spirits that are flavored with juniper berries and so-called botanicals (a varied assortment of herbs and spices). The spirit base of Gin is primarily grain (usually wheat or rye), which results in a light-bodied spirit.
London Dry Gin is the dominant English style of Gin. As a style it lends itself particularly well to mixing. London Dry Gin is the dominant Gin style in the United Kingdom, former British colonies, the United States, and Spain.
Plymouth Gin is relatively full-bodied (when compared to London Dry Gin). It is clear, slightly fruity, and very aromatic. Originally the local Gin style of the English Channel port of Plymouth, modern Plymouth Gin is nowadays made only by one distillery in Plymouth, Coates & Co., which also controls the right to the term Plymouth Gin.
Genever is made primarily from "malt wine" (a mixture of malted barley, wheat, corn, and rye), which produces a fuller-bodied spirit similar to raw malt whisky. A small number of genevers in Holland and Belgium are distilled directly from fermented juniper berries, producing a particularly intensely flavored spirit.

Imperial PILSNERS
Most commonly found in Poland, but also in other European countries as well, especially the East. These are essentially stronger versions of pilsners, though the increased malt and alcohol will noticeable reduce the hop accent. Because these are usually all-malt, and comfortably hopped, they are easily distinguishable from malt liquors. Without the malt character of bocks, these are worthy of a style all their own. In the US, a similar idea has been derived and is usually called Imperial Pilsner.

Classic German Pilsener
German pilsners typically come in two varieties, the northern and the southern. Southern examples are akin to a Bohemian pilsner with German hops and less malt. Northern examples are very well-attenuated (leaner in body) and dry.

Pale Lager
The colour of pale lager ranges from light bronze to nearly transparent and the alcohol anywhere from 4-6%. Adjunct usage may be quite high, though in some cases the beer is all-malt. One thing that doesn’t vary is that neither the malt nor the hops make much of an impression on the palate. These beers are brewed for minimum character, though faint traces of hop or malt may show through. More likely though is that adjuncts like corn will show through, or you’ll find notes of higher alcohols (fuel notes) due to the use of high-gravity brewing. The body will be thin and watery, and the finish is typically non-existent.

Premium Lager
A beer that straddles between the mainstream Pale Lager and Pilsner. Not all beers that call themselves Premium Lager are, but those that are will typically have a deep gold to light bronze colour, and distinct influence of malt and hops. Overall accent will be malty-to-balanced, alcohol in a slightly tighter range than either Pale Lager or Pilsner (4.5-5.5%). Most often the product of a microbrewery or brewpub, but macrobreweries can make this style if they jack up the hops a bit and make it all-malt.

Belgian style wheat beers are very pale, opaque, with the crisp character of wheat, plus the citric refreshment of orange peel and coriander. Ingredients sometimes also include oats for smoothness, and other spices such as grains of paradise. Serve with light cheeses or mussels.

German Hefeweizen
Depending on the style can range from pale and light body to dark brown with full body. Wheat beer is characterized by it’s cloudy appearance and it’s banana and sometimes vanilla aftertaste.

Dunkelweizen
A dark take on the German wheat theme, dunkelweizens have the same banana and clove notes of their pale cousins, but also have earthy, toasty, chocolatey notes from the addition of dark malts. They are "shoulder season" wheat beers to many drinkers - something a little more robust than a hefeweizen for the fall and spring seasons, but not as rich as winter’s weizenbocks. Alcohol is between 4.8-5.6% generally, bitterness is low, and carbonation is high. Occasionally, you will see dark versions of American Wheats, but these are uncommon.

Heller Bock
The Heller Bock is primarily a malty beer from the German brewing tradition with little hop character - neither bitter nor aromatic - though the style typically has a little more hops than the standard Bock. SOUR ALES
Sour Ales have a strong fruit flavor similar to the aroma, but more intense. Plum, prune, raisin and black cherry are the most common flavors, followed by orange and some spiciness. Sour Ales have an obvious sour or acidic taste, but this characteristic can range from moderate to strong. There is no hop bitterness, but tannins are common. Subsequently, Sour Ales are often described as the most "wine-like" of all beers. Sours are an acquired taste.

Made from fermented apple juice, cider comes in a number of varieties. English cider is dry, with fruity, tannic qualities and low carbonation. This can be found cask-conditioned in England. Normandy is another major cider-producing region, with a sweeter, more effervescent, very complex style. Ciders produced elsewhere are often sweet, simple beverages for mass consumption, though there are some good English-style ciders in North America and Norman-style ciders in Quebec.

English Pale Ale
Classic English Pale Ales are not pale but rather are golden to copper colored and display English variety hop character. Distinguishing characteristics are dryness and defined hop taste, but more malt balance than what you’ll typically find in an American Pale Ale. Great to drink with all sorts of meats including roast beef, lamb, burgers, duck, goose, etc. Note that the term ’pale ale’ is used in England to signify a bottled bitter, and in that way there is no such thing as ’English Pale Ale’ to the English. The style is a North American construct, borne of the multitude of pale ales that pay homage to these bottled bitters - Bass in particular - and therefore the majority of true examples of the style are found outside Britain.

American Pale Ales are light in color, ranging from golden to a light copper color. The style of this beer is defined by the American hops used. This style, the modern version of which has largely been formed in the US, has an intense hop flavor which was used to preserve the beer for the long voyage. IPAs work especially well at cutting the heat of chili, vindaloo or Sichuan cuisine. In England, IPA is often just another name for bitter although some micros are doing their own versions of an American IPA as well.

Imperial IPA, Double IPA or DIPA is a strong, often sweet, intensely hoppy version of the traditional India Pale Ale. Abbey Tripels
Like other abbey ales, Tripels are strong, yeasty-malty beers. But they are also pale, and have a notable hop profile. Hop bitterness may be higher than a typical abbey ale, up to 45IBUs. But the finish is where the hops really shine, as tripels should finish fairly dry. Otherwise, maltiness is still essential to the style, and the assertive yeast note typical of all abbey ales will be more apparent in tripels, since they do not have the rich dark malts to distract the palate. Alcohol flavours feature more prominently in Tripels that in just about any other style.

Quadrupels
Quadrupel, is the name given to ultra-strong Trappist and abbey ales. The name Abt was pioneered to describe Westvleteren and the beer that would become St. Bernardus. Quadrupel was pioneered by La Trappe. Abts are the darker of the two, with more rich, deep fruity notes. Quads are paler, with corresponding peachy notes. BARLEY WINE ALES
A Barley Wine is a strong, top-fermenting ale, with an alcohol contents of at least 9% and up to 13% (or more) by volume. Hops may be hardly noticeable at all or very noticeable. Sip them out of the special glass, that will concentrate the aroma. They are excellent with cigars or with dessert.

LAMBIC
Lambics are wheat beers made with stale hops and fermented with wild yeasts and other microorganisms, traditionally only on the Senne Valley in and around Brussels. The most traditional of the fruit lambics are kriek (cherry) and framboise (raspberry). In modern times, peaches (peche), blackcurrants (cassis), grapes, as well as more exotic fruits are used. Traditional lambics are commonly denoted by the term "oud", which is a reference to "old-style", and these are the most sour. More commonly, though, lambics are sweetened to cut the intense acidity. Serve with sharp cheeses or pickled dishes, or use in the preparation of mussels.

Browns, Porters & Stouts, the dark stuff
Brown Ales
Color ranges from reddish-brown to dark brown. Lower in alcohol than porter, medium to full body flavor. Appropriate foods are apple pie, pork with brown sauce, beef vegetable soup and cheddar.

Porter
Black or chocolate malt gives the porter it’s dark brown color. Porters are well hopped and heavily malted. This is a medium-bodied beer. Porters can be sweet. Hoppiness can range from bitter to mild. Porters are often confused with stouts (and with good reason, but that’s for another day).

Sweet Stout
Dark brown to black in colour. Sweet stouts come in two main varieties - milk stout and oatmeal stout. Milk stouts are made with the addition of lactose, and are sweet, low-alcohol brews. Oatmeal lends a smooth fullness of body to stouts. All of the sweet stouts are noted for their restrained roastiness in comparison with other stouts, and low hop levels.

Imperial Stout
Imperial stouts are usually extremely dark brown to black in color with flavors that are intensely malty, deeply roasted and sometimes with accents of dark fruit (raisin, fig) or milk sourness.
